THE SAUCE · CULT FAVOURITE

THE WHOLESHABANG

The Whole Shabang is Kickin'Inn's signature Cajun seafood sauce: butter, paprika, cayenne, garlic, lemon and a heat that builds. It's the sauce that gets ordered on top of the bag, on the side, by the cup. Every Kickin'Inn has it. Add it to any order.

How the Whole Shabang actually tastes

Four readings on one sauce. Heat builds slow. Butter carries it. Cayenne lands last. You can layer it onto any spice level from the menu.

HEAT

4 / 5

Cayenne does the work. Builds on the second prawn, not the first.

SWEETNESS

2 / 5

A whisper of brown sugar. Rounds the cayenne without being a dessert sauce.

UMAMI

4 / 5

Garlic, paprika, butter and a slow base layer. The savoury floor under everything.

MOUTHFEEL

Velvety

Butter-coated, not watery. Clings to a prawn shell, scoops well with a corn cob.

THE SAUCE MATRIX

Which sauce, which seafood?

Four house sauces. Five seafood faces. Tap any sauce on the left to see what it actually pairs with. The Whole Shabang is the cult one, but each has a job. Want the longer read on each? Here's the sauce ladder explained.

Everything worth knowing about the Whole Shabang

What's in the Whole Shabang

The base is melted butter. From there: smoked paprika for colour and depth, cayenne for the heat, granulated garlic and onion, a slow squeeze of lemon, a small hit of brown sugar to round it, and our in-house Cajun blend. No alcohol. No pork-derived ingredients. If you want the full ingredient story we wrote a longer read on why this sauce earned a following.

Every batch gets tasted before it leaves the kitchen. The cayenne is the variable we watch closest. A batch that lands hotter than the line gets pulled, not poured.

Where the recipe came from

Sami and Ravi Singh spent months recipe-testing the sauce before the first Kickin'Inn opened in 2018. They wanted something that tasted Cajun without leaning American, and that worked on Australian seafood. The breakthrough was the butter ratio. Too much and the sauce drowned the prawn. Too little and the spice tasted dry. The version on the line today is recipe number 14. Their full story is here.

How we serve it

Two ways. Inside the bag, mixed through the broth with whatever spice level you pick. Or on the side, in a cup, for dunking. Most regulars do both. The bag-poured version softens with the broth. The side cup stays sharper, hotter, more concentrated. Pick the side cup if you want to control the dose.

It pairs across the menu. The bag, the platters, the family packs. See what we put it on or ask the functions team to scale it for a group.

Why people add extra

Because the heat builds. The first bite registers as butter and paprika. The second bite, you notice the cayenne. By the fourth you're sweating a bit, and the back of your throat tells you that you've been eating Cajun food. People who get the addiction order a second cup before they even start the bag. We sell out of side cups on a busy Saturday by 7pm. Worth ordering at the start.

Heat compared to the spice ladder

Kickin'Inn has five spice levels on the bag itself: Lemon Pepper, Mild, Medium, Hot, Extra Kickin'. The Whole Shabang is a finishing sauce on top of any of those, not a replacement. On its own it sits around a Medium-Hot, roughly a 4/5. Add it to a Hot bag and you're at the top of the ladder. Add it to a Mild bag and you get the Cajun flavour without the chilli punishment. We broke down how Cajun heat actually scales if you want the technical version, and the Cajun vs Creole question for the spice-blend nerds.

Halal certified, yes

Every Kickin'Inn restaurant in Australia is halal certified. The sauce, the broth, the sides, the prep line. No exceptions. Halal diners are a big share of our customers, so this isn't an afterthought. If your group has shellfish allergies, talk to the team before booking. The kitchen handles shellfish at every station, so cross-contact risk is real.

For birthdays, hens nights, work dinners and larger group bookings, the functions team can do the sauce as a per-head pour, on the side or mixed through. Members of the Birthday Club also get a free meal on their birthday at any location, sauce included.

THE METHOD

Three ways to eat with the sauce

If you ordered a side cup of the Whole Shabang, this is how to use it. None of this is precious. The kitchen built the sauce for hands. More on each sauce here.

Dunking a prawn into Cajun seafood boil broth01
DUNK

Drop, soak, lift

Drop a piece of seafood into the bag's broth. Let it soak for two seconds. The shells need that hit to glaze. Anything longer and the meat goes soft.

Kickin'Inn Mixed Bag with sauce02
DRAG

Pull through the side cup

Pull the dunked piece through your side cup of extra Whole Shabang. The sauce clings to shells better than to meat, so drag along the shell side first. Then the flesh.

Seafood boil bag with sauce pooled at the bottom03
SCOOP

Use the shells

The empty corn cob or a mussel shell scoops the last of the sauce out of the bag. Don't waste any. The pooled stuff at the bottom is the most concentrated bite of the meal.
