Everything worth knowing about the Whole Shabang
What's in the Whole Shabang
The base is melted butter. From there: smoked paprika for colour and depth, cayenne for the heat, granulated garlic and onion, a slow squeeze of lemon, a small hit of brown sugar to round it, and our in-house Cajun blend. No alcohol. No pork-derived ingredients. If you want the full ingredient story we wrote a longer read on why this sauce earned a following.
Every batch gets tasted before it leaves the kitchen. The cayenne is the variable we watch closest. A batch that lands hotter than the line gets pulled, not poured.
Where the recipe came from
Sami and Ravi Singh spent months recipe-testing the sauce before the first Kickin'Inn opened in 2018. They wanted something that tasted Cajun without leaning American, and that worked on Australian seafood. The breakthrough was the butter ratio. Too much and the sauce drowned the prawn. Too little and the spice tasted dry. The version on the line today is recipe number 14. Their full story is here.
How we serve it
Two ways. Inside the bag, mixed through the broth with whatever spice level you pick. Or on the side, in a cup, for dunking. Most regulars do both. The bag-poured version softens with the broth. The side cup stays sharper, hotter, more concentrated. Pick the side cup if you want to control the dose.
It pairs across the menu. The bag, the platters, the family packs. See what we put it on or ask the functions team to scale it for a group.
Why people add extra
Because the heat builds. The first bite registers as butter and paprika. The second bite, you notice the cayenne. By the fourth you're sweating a bit, and the back of your throat tells you that you've been eating Cajun food. People who get the addiction order a second cup before they even start the bag. We sell out of side cups on a busy Saturday by 7pm. Worth ordering at the start.
Heat compared to the spice ladder
Kickin'Inn has five spice levels on the bag itself: Lemon Pepper, Mild, Medium, Hot, Extra Kickin'. The Whole Shabang is a finishing sauce on top of any of those, not a replacement. On its own it sits around a Medium-Hot, roughly a 4/5. Add it to a Hot bag and you're at the top of the ladder. Add it to a Mild bag and you get the Cajun flavour without the chilli punishment. We broke down how Cajun heat actually scales if you want the technical version, and the Cajun vs Creole question for the spice-blend nerds.
Halal certified, yes
Every Kickin'Inn restaurant in Australia is halal certified. The sauce, the broth, the sides, the prep line. No exceptions. Halal diners are a big share of our customers, so this isn't an afterthought. If your group has shellfish allergies, talk to the team before booking. The kitchen handles shellfish at every station, so cross-contact risk is real.
For birthdays, hens nights, work dinners and larger group bookings, the functions team can do the sauce as a per-head pour, on the side or mixed through. Members of the Birthday Club also get a free meal on their birthday at any location, sauce included.
